Potato in Tomato-onion gravy

Ingredients

  • 3-4 Medium Potatoes
  • 1/3 Cup grated paneer
  • 2 Chopped green chillies
  • 1 Tbsp coriander powder
  • 1 Tsp cumin powder
  • 1/2 Tsp turmeric
  • 1 Tsp red chilli powder
  • 1 Tsp amchur powder
  • 1 Tsp kasturimethi
  • 1/2 Tsp garam masala
  • 1 Chopped onion
  • 1.5 Tsp ginger garlic paste
  • 3 Medium diced tomatoes, pureed
  • 1 Tbsp cashew paste
  • 2 Tbsp cream

Process

  • Peel potatoes and prick with a fork. Apply oil and microwave for 7 minutes.
  • Let it cool, cut it in half and scoop out the using a small spoon, scoop out the flesh leaving a 1/4″ shell.
  • Air fry the shells at 200C for 12-15 minutes.
  • In a bowl combine the scooped potato, grated paneer, red chilli powder, turmeric, amchur, coriander powder, cumin powder and salt.
  • Stuff the fried shells with the paneer and potato.

Gravy

  • Add ghee to a pan. Add chopped onion and ginger garlic paste sauté for 3-4 minutes.
  • Add 1/4 tsp turmeric, kasturimethi, green chillies, 1tsp cumin powder, 1.5 tsp coriander powder, red chilli powder and salt. Sauté for 2-3 minutes.
  • Add the tomato puree and cook on low flame for 15 minutes.
  • Add cashew paste, garam masala and cream. Add the stuffed potato and stir.
  • Serve hot with roti, naan or rice.
